Raised Southern Illinois Prawns
Southern Illinois prawns make incredible shrimp cocktail
and are wonderful served cold in salads. To prepare them to serve cold, don't boil them. Instead, season the water
and bring it to a boil. Pour the shrimp into the water and immediately turn it down to a simmer. The shrimp will
cook in about four minutes and will turn pink and rise to the top. Strain them and immediately cover them with iced
water to stop the cooking. When they have chilled, peel them and serve them with your favorite sauce.
