This Strawberry Bibb Salad couldn't
be easier! Cradle sliced strawberries, julienned sweet onions and Chevre cheese in crisp bibb lettuce. Drizzle
Vidalia salad dressing over it all. To make this even more special, coat the slices of chevre in finely chopped pecans
and toast lightly in a non-stick skillet just before serving. I love Vidalia onions and strongly suggest that you buy
the salad dressing this time! I don't even try to duplicate the recipe!
A pretty crystal bowl of juicy sweet strawberries,
a round of Gouda cheese, a loaf of apricot cream cheese, Balsamic vinegar and a small dish of fig preserves ... makes a fantastic
dessert tray. Dip the strawberries in the Balsamic; spread the fig preserves over a tiny wedge of Gouda and your
taste buds will go razzle dazzle!This
is great served with a dry red wine. We love it with an Australian Shiraz or a local Chamborcin. We enjoy our
southern Illinois wines, but we keep a huge selections of wines from around the world. We don't want to limit ourselves!
This beautiful Asparagus Salad is easily made by blanching the asparagus and
chilling it. Place it over mixed greens, add slices of boiled eggs, cherry tomatoes and crumbles of bleu cheese.
Your favorite vinaigrette tops it off. I love to make mine from equal parts of orange infused olive oil, white wine
vinegar, water and sugar.
Don't forget how easy it is to whip up shrimp cocktail! These are big
fat prawns grown on a farm in southern Illinois. They have to be lightly poached and chilled, peeled and deveined ...
but you can skip the work and buy frozen prepared shrimp. All you have to do is thaw them and serve them!
